Heard this one while in Australia a couple years back. My brother brought it up again last night. I've got two anwers, but still missing one.
There are three countries in the world that in the name doesn't have the letters of "MACKEREL" in it. What 3 countries are these?

Actually, I cheated.
Put a list of all the countries in the world in a text document. Exchange the m, a, c,k, e, r, and l with spaces. Look down the list for anythiing left that looked like a country. :-)
Well even though you cheated, I'm glad to find out the last country. We've been stumped for the last little while. :)
